Ingredients
Topping
  • 200 g plain flour
  • 120 g unsalted butter
  • 100 g unrefined caster sugar
  • 100 g oats
Fruit filling
  • 400 g plums
  • 200 g apricots
  • 5 - 6 redcurrant stalks (plus more to decorate)
  • 100 g unrefined caster sugar
  • 1 tsp ground ginger
  • 1 tsp natural vanilla extract
  • sour cream to serve
Instructions
  1. Sift the flour into a food processor bowl, chop the butter into small cubes, add the butter and sugar to the flour and whiz for 4 - 5 minutes until the mixture resembles crumbs. Add the oats and mix them with the crumbs.
  2. Remove all stones from plums and apricots and slice them into bite size chunks. Add the currants, caster sugar, ginger and vanilla extract and toss it all together to cover the fruit chunks in sugar and spices.
  3. Transfer the mixture into a large ovenproof dish or divide into medium sized ramekins and top it up with the crumble mix.
  4. Bake in the oven, preheated to 180°C for 40 - 45 minutes, until the top is golden brown.
  5. Serve decorated with sour cream or natural yoghurt and a stall of redcurrants.
